Measuring Cooling Fan RPM using a Low Amp Probe

I have this Pontiac that is running "hot". The low speed fan turns on at 224* F and turns off at 180* F. The issue is it takes forever to get to 180*. When I drive it at 65 MPH it stays at 175* F so I am ruling out a plugged radiator.
