I suspect that you have at least one partially clogged cat.

I believe the firing order on that engine is 1-3-7-2-6-5-4-8. If you are measuring at the o2 sensor location on bank 2, a sensitive guage will bounce with a restricted exhaust as 7, 6, 5 and 8 fire.... Login to read more.
