That was one of my biggest lessons when starting out. Do not try to get it done 'on time'. It will only add stress and frustration. I would shoot for atleast 2hrs early, 4 would be preffered. My last pork butt ended up getting done close to 6 hrs early. I leav... Login to read more. ![]()
