Used the Cooks Illustrated dry brine technique. Turned out really good and a lot easier than a wet brine. 2 tbsp Kosher Salt 1.5 tbsp Cracked black pepper plus my stuff 2 tbsp Herbs de Provonce 1 tsp granulated garlic
